WHAT ARE MICROGREENS

Microgreens are seedlings of vegetables and herbs. When a plant begins to grow from a seed it goes through several stages. Microgreens are sometimes mistakenly referred to as sprouts but microgreens are NOT sprouts. The first stage of growth is the sprout stage. Sprouts are usually grown in water and harvested after 2-3 days   As you can see in the accompanying image, the microgreen is the second edible stage of growth of the plant and are usually harvested in 1-3 weeks. The next stage is the baby green followed by the maturity stage and then finally the flower stage.

But from a nutritional standpoint, the microgreen stage is where you get the greatest value pound for pound.  In fact, a study conducted by researchers at the University of Maryland discovered that microgreens contained four to 40 times more nutrients than their mature counterparts.

WHY EAT LIVING MICROGREENS

There are a lot of good reasons to eat living microgreens—not the least of which is that they taste great.  In fact, one of the first things people say after tasting these tiny versions of the mature plant is, “Wow! The flavor is amazing!” And they’re right. But living microgreens not only taste good but they are also incredibly good for you.

When you eat living microgreens you are ingesting one of the most nutritionally dense foods available. Living microgreens are packed with phytonutrients, carotenoids, vitamins A, B, C, D, E & K, lutein, beta-carotene, calcium, magnesium, riboflavin, folate, fiber, niacin, manganese, iron, phosphorus, copper, zinc and more.  In fact as already mentioned, scientists at the University of Maryland and the U.S. Department of Agriculture found that living microgreens have up to 40% more nutrients than mature plants. These functional foods can aid in the prevention degenerative diseases. Plus, their high nutrient content can help lower blood pressure, improve digestion, strengthen bones and teeth, improve eyesight, and balance blood sugar. It’s important to note that we are talking about living microgreens not the ones that are already cut like you might find in your grocery store. Like any vegetable, once they’re cut they lose their nutritional value fast.
