WHAT ARE MICROGREENS
Microgreens are seedlings of vegetables and herbs. When a plant begins to grow from a seed it goes through several stages. Microgreens are sometimes mistakenly referred to as sprouts but microgreens are NOT sprouts. The first stage of growth is the sprout stage. Sprouts are usually grown in water and harvested after 2-3 days As you can see in the accompanying image, microgreens are the second edible stage of growth of the plant and are usually harvested in 1-3 weeks. The next stage is the baby green followed by the maturity stage and then finally the flower stage.
However, from a nutritional standpoint, It’s the microgreen stage where you get the greatest value pound for pound. In fact, a study conducted by researchers at the University of Maryland discovered that microgreens contained four to 40 times more nutrients than their mature counterparts.
